mmmmmm I love to cook ... I love the smells of the food as it's cooking ... and the wonderful memories I can recall from different moments in my life. There are times when this cook is feelin' kinda' pooped so a can of tuna and some simple mixin's added will make it into a most delectable meal. I have found that a simple meal can be the most enjoyable one ... the one that you appreciate the most. I know we all enjoy eating so please post your recipes here in My Kitchen. Happy Eating! |

Well, last nite I opened up the frig and was trying to figure out what to make for dinner. There were some nice packaged turkey cutlets sitting there -- so I figured -- yes let's cook you up. Ingredients: 1 - 16 oz. - pkdg. of fresh or frozen or thawed, turkey cutlets 1 large egg or egg substitute Bread crumbs -- add in seasoning of your choice (I am partial to Italian seasoning). Juice of a half lemon 1 envelope chicken flavor bouillon -- it's salty use about a tsp. of it or more to your taste Olive oil Cooking spray - Canola oil 3/4 cup of water On a cutting board, with a meat mallet or the dull edge of a knife (here is the good part -- ya' can get out all of your aggression -- pound out the turkey cutlets till they are much thinnner. If the pieces are too big -- cut them in half. Put them aside. In a plate, beat the egg -- in a plate put your seasoned bread crumbs. Dip the cutlets first in egg then the crumbs. In a large skillet that has been sprayed with Cooking spray and a small amount of Olive oil - add the turkey cutlets until they are browned on both sides. Remove to plate. Reduce heat to low. Squeeze the juice of a half lemon into the drippings in the skillet. Stir in bouillion & 3/4 cup water until blended; scraping to lossen any brown bits from the botton of the pan. Return the turkey to the skillet, cover it and simmer 5 minutes or until tender. |

I am leaving for anyone who stops by the kitchen a large bowl of fresh fruit ... golden delicious apples, pears, deep purple plums and seedless grapes. There is a tray in the refrigerator of nice cheeses -- danish havarti, brie and camenbert. Several good bottle of sherry, white wine and red, Black Adder, Fuller's Red Fox and light beer also. An assortment of crackers is on the table. Enjoy! |

That is fine,quark. I did not know about the other thread and would not want anyone to feel that I was stepping on their 'toes' so to speak. If there is anything that anyone is particularly interested relating to cooking feel free to share your ideas -- it is an open forum and all ideas are always welcome. This morning for breakfast I had one of my favorites in the winter time ... oatmeal and not instant,the long cooking time. I sprinkled a bit of brown sugar on the top and served it with a bit of milk stirred in. Sometimes when I am making it I will cut up a banana and cook it in the mixture. It tastes really good! |

No sarcasm intended. Check the packaging very carefully for ingredients etc., When possible buy from local produce providers if price allows. I always try to buy locally produced if only to support local farmers in my small way. |

Hi all,this is the first time I've stepped in here,how bright and cheerful. The smells are terrific and the sun shining in gives you that summer warmth. I'm not much of a cook,I can provide simple fare. We live mostly on what we get from the sea and grow in the garden. Lots of potato. I play in a band and could provide you with a tune or two. Simple fare can be great and I think is the best kind ... it's what I first learned how to cook. I love potato and consider myself to be the 'mash potato queen' -- I make a dish with cod fish, cut up potatoes, carrots, onions cut into pieces, dillweed and salt (not too much) and add water and put it in in a large skillet pan on a medium flame. I add the fish last as that cooks quickly. I always have music on whatever I'm doing .. it's very much a part of my life and always has been. Irish folk music is lovely. |

Now merlin it goes without saying that quark is invited and let me tell you it's not easy finding tube grubs at this time of year -- they've all gone frozen!! For quark there are some delicious uttaberry crepes ... just as he remembers from way back when. My dog Lord Bryon thinks they are quite delectable too. |

For breakfast hearty slices of french toast dipped in egg and I'm using fresh cinnamon and real vanilla. Sprinkling the french toast with just a smattering of powdered sugar. Have some very good maple syprup and sausage on the side. I'm thinking that those fresh blueberries sitting in the bowl in the refrigerator would look very nice on the plate to be eaten up. Made a pot of coffee and there's fresh cream. Taking Lord Byron for a walk; he's getting fidgety. |

@quark Ha ... a stick or two would never do it. He's sitting in my lap right now as I am figuring out what to make for lunch today. He does not seem to realize how very large he is and only wants to cuddle. There is a good solution though ... I put my head on him and then all is right with the world. It is grey outside today ... blech. But, I've got great music playing in the kitchen. Grey Eye Glances -- one of my faves for some time now. I'm going to grill up some chicken breasts in a bit of olive oil and season with kosher salt and basil. Have fresh squash and right now using a veggie peeler and cutting thin ribbons of the squash. It looks nice in the plate and I've added some lettuce to it and a bit of dressing ; a squeeze of lemon and I'm good to go. |

I'm allergic to prawn so unless I'm to be the entertainment for the evening and all can watch me swell up ... it's best to go with chicken which I do like very much. ged -- Of course I'm psychic didn't ya' know? No, I just took a guess on that one. You've always said you are a 'rubbish cook' so mebbe you like takeout food ... and that would be chinese, italian ... Chinese food is one of my favourite foods. ged --- It's been a very long time since I've had shell fish. A long time ago I was out with friends had shrimp and within a short time my mouth felt funny. Cut to the chase ... my friends drove me to the hospital. I had a horrid reaction and got a shot and medication. So no shellfish for me unless I plan on being the entertainment. I really like chicken in black bean sauce, chicken with asparagas, chicken with green beans ... not really that big on red meat. I ordered up all of these for lunch today and they are sitting in special air-tight containers to stay hot. |

my mincemeat is the best i put dried figs and apricots in , no greasy suet, (that's why cheap shop bought ones leave that horrible coating of the roof of your mouth)it soaks and then simmers in guiness and when cooling has a bit of whiskey stirred through for extra warmth. This year it's a toss up between glayva or drambuie @romeo that's classed as leftovers too lol I'll leave the bottles here incase anyone wants to help clear up. |

@gedmen here you go mate hope you enjoy and anybody else who wants to try it INGREDIENTS 190 g self-rising flour 200 g white sugar 2 g ground cinnamon 2 eggs, beaten 55 g melted butter 140 g prepared mincemeat pie filling 140 g whole cranberry sauce 120 g pumpkin puree 227.2 g sour cream 224 g cream cheese 40 g confectioners' sugar Add to Recipe Box Add to Shopping List Add a Personal Note DIRECTIONS Grease one 2-quart lidded pudding mold. Sift together the flour, sugar and cinnamon; set aside. In a large bowl, mix together the eggs, butter, mincemeat, cranberry sauce and pumpkin. Add to flour mixture and mix until smooth; pour into pudding mold. Place a rack in the bottom of a large pot, over medium heat, and fill 1/2 way up with boiling water. Place the pudding on the rack. Steam for 2 1/2 hours. Check the pan occasionally and add more water if needed. Check for doneness by inserting a toothpick in the center. When firm, place the pudding mold on a rack outside of the water for 10 minutes and unmold. Prepare a sauce by blending together the sour cream, cream cheese and confectioners sugar. Spoon dollops over warm pudding and serve. gedmen if this sounds to hard let me know and i'ii come up with an easyer one if you like |

@gedmen try this one if you like Ingredients Plum Pudding 540 mls all-purpose flour 240 mls fresh bread crumbs 1 teaspoon(s) baking powder 1 teaspoon(s) ground cinnamon 1/2 teaspoon(s) salt 1/4 teaspoon(s) ground nutmeg 1/4 teaspoon(s) ground cloves 240 mls pitted prunes, chopped 240 mls pitted dates, chopped 180 mls dark seedless raisins 120 mls walnuts, toasted and chopped 1 medium Granny Smith apple, peeled, cored, and coarsely shredded 1 teaspoon(s) grated lemon peel 240 mls (2 sticks) margarine or butter, softened 240 mls light brown sugar, packed 2 large eggs 160 mls buttermilk 120 mls dark molasses 80 mls dark rum or brandy Hard Sauce 240 mls (2 sticks) butter, softened (do not use margarine) 480 mls confectioners' sugar 480 mls dark rum or brandy 1 teaspoon(s) vanilla extract Directions 1. Heavily grease two 1-quart heat-safe bowls. Cut 2 pieces of foil, 1 to cover top of each bowl, allowing 1-inch overhang. Grease 1 side of each piece of foil; set aside. 2. Prepare Plum Pudding: In large bowl, combine first 7 ingredients. Add prunes, dates, raisins, walnuts, apple, and lemon peel to flour mixture. Tie foil tightly in place with string around outside of bowls so pudding surface does not get wet from steam. 5. Place a metal cookie cutter into each of two 5- or 6-quart saucepots. (The cookie cutters are used as trivets so bowls remain elevated during steaming.) Pour in water to measure 1 1/2 inches. Set bowls on top of cookie cutters. Cover saucepots and heat water to boiling over high heat. Reduce heat to low; simmer puddings about 2 hours or until toothpick inserted through foil into center comes out clean. 6. Meanwhile, prepare Hard Sauce: In small bowl, with mixer at medium speed, beat butter until smooth. At low speed, gradually beat in confectioners' sugar until creamy. Beat in rum or brandy with vanilla. Spoon into 1 or 2 decorative crocks or bowls; cover tightly and refrigerate up to 1 month. To serve, let stand at room temperature 30 minutes or until soft enough to spread. 7. When puddings are done, cool in bowls on wire racks 5 minutes. for anyone who enjoy's making pizza at home this pizza sauce is the best go's good on pita bread as well as normal size pizzas if your making a few you might have to double the ingredients and don't add to much topping have a thin and crispy one with plenty of sauce hope you enjoy it's the best pizza sauce going INGREDIENTS 1 (6 ounce) can tomato paste 175 ml warm water (110 degrees F/45 degrees C) 15 g grated Parmesan cheese 3 g minced garlic 30 ml honey 5 g anchovy paste (optional) 2 g onion powder 0.4 g dried oregano 0.2 g dried marjoram 0.4 g dried basil 0.5 g ground black pepper 0.3 g cayenne pepper 0.3 g dried red pepper flakes salt to taste DIRECTIONS In a small bowl, combine tomato paste, water, Parmesan cheese, garlic, honey, anchovy paste, onion powder, oregano, marjoram, basil, ground black pepper, cayenne pepper, red pepper flakes and salt; mix together, breaking up any clumps of cheese. i love amaretto with lots of ice, my visitors have just left, they didn't make it to the cheese course maybe the huge seafood starter and then all that steak was and then trifle was just too filling lol. here you go gedmen fool proof rib roast INGREDIENTS (Nutrition) 1 (5 pound) standing beef rib roast 10 g salt 2 g ground black pepper 3 g garlic powder DIRECTIONS Allow roast to stand at room temperature for at least 1 hour. Preheat the oven to 375 degrees F (190 degrees C). Combine the salt, pepper and garlic powder in a small cup. Place the roast on a rack in a roasting pan so that the fatty side is up and the rib side is on the bottom. Rub the seasoning onto the roast. Roast for 1 hour in the preheated oven. Turn the oven off and leave the roast inside. Do not open the door. here's another gedmen Roasted Rack of Lamb 20 g fresh bread crumbs 15 g minced garlic 3 g chopped fresh rosemary 6 g salt 0.5 g black pepper 30 ml olive oil 1 (7 bone) rack of lamb, trimmed and frenched 6 g salt 2 g black pepper 30 ml olive oil 15 ml Dijon mustard Add to Recipe Box Add to Shopping List Add a Personal Note DIRECTIONS Preheat oven to 450 degrees F (230 degrees C). Move oven rack to the center position. In a large bowl, combine bread crumbs, garlic, rosemary, 1 teaspoon salt and 1/4 teaspoon pepper. Toss in 2 tablespoons olive oil to moisten mixture. Set aside. Season the rack all over with salt and pepper. Heat 2 tablespoons olive oil in a large heavy oven proof skillet over high heat. Sear rack of lamb for 1 to 2 minutes on all sides. Set aside for a few minutes. Brush rack of lamb with the mustard. Roll in the bread crumb mixture until evenly coated. Cover the ends of the bones with foil to prevent charring. ged how about a nice gravy to go with that roast beef. take 2tbsp of the fatty juices from the bottom of the roasting dish add 1tbsp of flour and mix to a paste add 100ml of ruby port and whisk over a low heat until thickened and boiling Take it off the heat and whisk in 500ml of hot beef stock (bisto will do) Add 4oz of stilton (or more )and stir to melt add itsp redcurrent jelly add salt and pepper and simmer for 5 mins stir in another tbsp of port before serving This can be made as soon as the beef comes out the oven and the last step done just before you want to serve it. stilton soup. just made it for lunch.dead easy but tastes really good. 2 leeks washed and chopped 2 med potatoes peeled and med chopped 4/6oz stilton (to taste) 50gr butter 900ml chicken stock (chicken bovril or cube ) hot 2 bay leaves. pepper to taste .1 tablespoon plain flour cream and some xtra stilton to serve. sweat the leeks in butter . sprinkle flour over then stir. add potatoes and hot stock simmer still soft add stilton stirring briskly till melted do not allow to boil!!! remove bay leaves . blend . add pepper ,dash of cream, check for salt not always needed. crumble a good portion of stilton into a warmed soup bowl and pour soup over. served today with home made crusty bread. now making my first thai curry. |

@tash bonfire night is nov 5th in the uk, it celebrates the failure of a plot to blow up the houses of parliment. We have bonfires and fireworks, traditional food is gingerbread , treacle toffee and i usually make chilli to eat outside for watching the fireworks. So ged (or you lol) can remind me in nov to try mulligatawny soup. And romeo can remind us every day for the next 7 incase we forget his birthday, because sod's law says we are sure to because we've been reminded early lol |

@tash and merl what is a dutch oven is it a slow oven? Anyway 2 onions finely chopped 3lb braising steak carrots scraped and chopped on the diagonal 2 cans guiness 1 jar passatta. mushrooms (optional) brown the meat and the onions , fling everything in a big pot/casserole dish add a bay leaf or two bring to a gentle simmer then transfer to a medium oven for an hour or two, then turn oven down really low and leave for hours and hours and hours lol. I usually leave mine in the oven overnight, sometimes if i've cooked it for a long time i turn the oven off and leave the dish in it till the oven's cold. This tastes better the longer it's left, and can be made with any cut of meat even the cheapest just cook it all day. It makes a nice pie as well. |

windsor, a dutch oven is a five quart pot with a tight fitting lid. You can use it for making stews, braising, pot-roasts, soups. What's nice is that you can use a dutch oven to make a complete meal. Thanks for the recipe! |

Here's a recipe for Cheese Cake Cheesecake topping: 8 oz. Cream cheese 2/3 cup Sugar 1/2 cup Sour cream 1 packet of vanilla 2 eggs Topping of sour cream : 1 cup Sour cream 2 Tb sugar 1 packet of vanilla Cake batter: 1 tsp Baking powder 1/2 tsp Salt 1 cup of flour 4 oz Unsalted butter 2/3 cup sugar 1tb milk 2 eggs 1 P.Vanilla let the Oven Temp ~ 350° Baking Time ~ 40 - 45 Min. Pan Type ~ 9 x 9 inch pan Topping: Beat cream cheese and sugar together until well blended, then mix in sour cream and vanilla. Beat in eggs one at a time, then set aside. Cake: Sift dry ingredients together. Cream butter and sugar, then beat in eggs, milk and vanilla. Stir in dry ingredients. Spread cake batter over bottom and sides of pan, spreading much thinner on sides. Spoon cheesecake mixture over batter. Bake until cheesecake is set. Spread with sour cream topping, then return to oven for another 5 minutes. Cool, then refrigerate at least 4 hours. BTW .. To be honest .. I dnt knw how to cock :)) .. Okay .. This is a simple recipe for Sushi : Ingredients : 200 g Japanese Sushi rice, black pepper 50 ml Mirin, (Japanese rice vinegar) 50g Sugar 6 sheets Nori seaweed 3-4 tsp Wasabi 1 Cucumber, deseeded and cut into matchstick strips 75g smoked Tuna pickled Ginger Soy sauce sprigs of fresh Coriander .... Method of preparation : 1. Rinse the sushi rice thoroughly. Drain, place in a saucepan, add 300ml water, bring to the boil, cover, reduce heat and simmer for 12 minutes until rice tender. 2. Transfer the rice to a bowl and allow to cool slightly. Put the salt and freshly ground pepper. Add the rice wine vinegar and sugar and mix. 3. Spread wasabi paste to taste on the nori sheets. 4. Place one of the nori sheets on a sushi mat. Leaving a 25mm gap at the base, spread a line of rice about 30mm wide onto the nori sheet. 5. Press a line of cucumber and smoked tuna down the middle. Top with more rice and roll up tightly. Repeat the process until all the nori sheets have been filled. 6. Cover the sushi and chill for 30 minutes to set. 7. Slice the sushi rolls across. Hello again .. 2day I present a recipe for sausage stuffing .. It's delicious and easy enough to make for any day of the week.. 1st the INGREDIENTS : * 1 pound Bob Evans® Savory Sage or Original Recipe Sausage Roll * 1 large onion, diced * 3 stalks celery, diced * 1 (14 ounce) package cubed stuffing * 1 teaspoon poultry seasoning * 2 1/2 cups chicken broth * 1/2 cup melted butter 2nd Method of preparation : 1. In a large skillet over medium heat, crumble sausage. 2. Add onion and celery and cook , stir until sausage is brown. 3. In a large bowl, place cubed stuffing. 4. Add sausage mixture. Sprinkle with poultry seasoning. 5. Pour broth and butter over the top and toss to combine. 6. Spoon mixture into a baking dish. 7. Bake at 350 degrees F for 45 minutes. @thor for the meatballs you can add some italian breadcrumbs (those are already seasoned and I also put in some basil to the whole mixture with some salt. I shape the meatballs into whatever size I like and drop them into a medium size pot of crushed tomatoes in thick puree -- cook until done. |

I forgot ... add some sliced mushrooms to your pot & if you like cook some garlic in a separate pan and then add to your meatball & sauce mixture the last 10 minutes of cooking. I also add an egg to the meat before mixing in the bread crumbs. Very good with angel hair pasta and pecorino romano cheese sprinkled on the top. A glass of wine and a side salad -- lovely meal. |

@ quark ???????????? @ged, tash and merlin we had a good day but 12 faults :( ist fence down then both parts of a double but there were only 2 clears out of a class of 25. This pony can knock down with her front feet if not ridden well but all knockdowns were with the back so daughter no3 didn't make any mistakes but pony could have helped out a bit more (better than the other way around lol). Still a good day though and all that new tack i bought looked very pretty on but i'm pleased with how they went, no stroppy tantrams unlike others lol |

@windsor - congrats are in order for it was a good day!! @quark - what the devil are mangled wurzels?? @ged I made roast chicken with lots of vidalia onions, seasoned very nicely and then as a side dish were the parsnips; cleaned up & peeled & put in a large pan & browned on both sides, then added was honey mustard & a dressing of orange, white vinegar & white wine. When combined it's very tasty. |

I would go with amaretto di saronno with peaches sliced up simmered on a low flame, cooled off and then poured over the ice cold ice cream. I've also added sweet cherries to the peach mixture with a splash of vanilla and a bit of sugar. Or, take a banana cut it up, put it in a pan with butter and add brown sugar, rum and cinnamon and add your vanilla ice cream to that. |

Put a bananna in its skin in the oven bake until gooey and serve with ice -cream, once youve perfected that try slitting the skin and drizzling tia mara over it or pushing choc buttons in before baking.
