I'd like to get back into it professionally,spent 25 some odd years working as a sous chef among other things.
It's tough this time of year here,most cookeries close for the winter.We depend a great deal on the tourist trade.And lately in the summer they have been importing a lot of Jamaican and Russian labor for those jobs.Kids getting out on there own don't have a chance at a job,so they move out of state.

You come here for the weekend!
We go to Ipanema Beach, very early in the morning because the sun is very hot (38/40°C) and your delicated ferge skin would resist. After, we will go to my home for you to cook this delicious pizza for me.
After, I will show you the city thru the eyes fo a true Carioca (carioca = who born in Rio de Janeiro).
Finally, at night, we will seat around The Rodrigo de Freitas Lagoon, drinking a cold beer and having a good friendly chat, with a sky full of stars.

What do you think? Fair trade?

Tonight I'm roasting a game hen with some root vegetables(potato,parsnips,and carrots with garlic,honey and butter.)Will make some cranberry sauce also.
Maybe a small salad.Jack and Ginger will be showing up in an 8oz. glass over ice.And will wash this all down with part 2 of "the Year of Hell" Star Trek Voyager season 4.

@Nagila Uncle,I believe that eating honey often helps people that suffer from allergies build an immunity to these allergies.The honey must be from the area that you live.I also allow myself to be stung by bees while in my garden to help keep the immune system healthy.

Now as a Ferengi I must point out that gree worms are delicious

They are very juicy, some say they are best eaten slightly toasted.

I prefer them live but caution must be taken for a live gree-worm can bite.

They can also be Jellied.This is very popular with Ferengi children.

They are similar in taste to your Aussie witchetty grub.
(which are the larvae of cossid moths , ghost moths, or longicorn beetles)

I usually eat a Television Dinner away from the Television, Hah! Eck! That stuff is horrible, I managed to make some Broiled BBQ Pork Chops (tastes just like steak, I was a little confused when I got out meat to defrost) And also a baked potato, and fresh broccoli. Now thats a well balanced meal, oh yeah, and some red wine, it makes the nights just a little bit warmer.

Having Surf-N-Turf. Starting with a nice salad and then some New England Clam Chowder. Prime Rib/Lobster with home baked potato and sour cream. Also shrimp and clams on the side. Finishing with Chocolate fudge cream cake covered in sweet cherries , whipped topping and chocolate fudge sauce.

@quark cream bacon and raw egg yolks stirred through cooked spaghetti till they are lightly cooked. I know it sounds horrible but it is delicious. If the eggs are cooked too much they scramble and aren't as nice. Mine was shop bought though (shame on me too lazy to make it proparly) don't know about ashgauld's though?

everything does taste better from scratch. i never ever buy ready made meal. what i do sometimes is have a day where i do lots of cooking things up, then portion it individual portions in plastic tubs and put in the freezer. it just means that i cantake them out when i'm doing 12hr shifts or just can't be bothered to cook.

Dutch Hamburgers:

Lean Ground Hamburger, 4 Rusk (dry bread), Dutch Spice called "Gehakt", some milk and 1-2 eggs rolled up in a ball and grilled. They can be ate as is or with the usual bun.

Have you ever had dutch style mayonaise with fries! Very bad for the cholesterol but tasty!

Not much to it really, tasty though!

Yes I have had the dutch mayo with fries. So you use the rusks as a filler/binder crumbled into the beef? Where do you get the "Gehakt", do you have to go to a dutch store? I make nasi horeng, which is an indonesian inspired dish from Holland.

My Kartoffeln Suppe is coming along nicely, been simmering in the slow-cooker all day. Went with sweeter onions, roasted garlic and a double-portion of keilbasa in this version....

ETC (Estimated Time of Chow): 2.5 hours.

Will top with finely shredded sharp cheddar cheese and crumbled bacon.

Boneless chicken cut thin, breaded and quickly fried, not thoroughly cooked. Chicken then lines the bottom of deep baking pan cover with tomato sauce, cover that with cheese, layer with cooked pasta the cover with more tomato sauce and another layer of cheese. Bake at 350 for 25 minutes.

I have also used Alfredo sauce over the chicken, that was interesting. Baking after light frying fully cooks the chicken. A layer of spinach or chopped broccoli my be add but increase cooking time accordingly.

It's Tuesday and it's my curry night again.

Diced lamb in a hot madras sauce over pilau rice with scrambled egg and peas. With chile sauce and raw onion strips to garnish. and a couple of Popadums on the side. Sliced peaches and icecream to follow.

Its actually pretty simple to make and the best part is that angel hair cooks twice as fast so I can make the whole thing in 15 minutes if my ingredients are prepped. Finish with some toasted garlic bread and have some nice spumoni for dessert. Makes a nice meal.

OK I faked it. Was busy power-watching Crusade and season 7 of CSI, ran out of steam so tonight was scalloped potatoes and sauteed ham with garlic. Basically bought one of those tubs of pre-made scalloped potatoes and a ham steak. While the tub of taters was nuking, I heated some olive oil, diced half of the ham steak and added it and a tablespoon of fresh garlic, sauteed till potatoes done, mixed it all together and served, topped with shredded parmesean. Served two for five bones and just as long a prepare time.

@Nog you were doing *so well* until you hit the squash ....the rest sounds heavenly. Think I am going asian tonight: grilled chicken breast sauteed in olive oil, fresh garlic, sweet onion and ginger, top with Yoshida sauce (its the weekend and I am feeling lazy), serve with rice.

Tonights meal comes as a dinner and a show package: Since starting work at a Japanese company, trips to Japan are in my future, like soon. During a cultural training class I took, Japanese kind of rate you on how well you use chopsticks. Thus am serving meals like this a lot and the missus and I bought this 1000-pack of chopsticks to practice with. And the laughter ensues....

I drove to the lockes which are only a couple of miles away early this morning before light.With my net and a flashlight I had two quarts of these sweet little fish in five minutes.They are popular fare here in Maine this time of year.I've been doing this since I was a young child.Next month I will put my crayfish pots out and enjoy a feast on those.When summer comes I go to the ocean and catch crabs and winkles(a type of snail)and dig for clams.There is also a type of kelp I love to eat that I collect myself.Yum,yum.

Saturday home made pizzas and chicken pakora baked banannas and anaretto ice-cream. Sunday jacket potatoes roast loin of pork on the bone, baked ham, roasted pears , shallots and apples to garnish the meats. carrots, green beans and sweetcorn, Baked squash and baby courgettes for the vegetarian (which are the only vegs she doesn't like apparantly)biscuits and cheese to follow. Tonight? leftovers (squash and courgettes in abundance lol) and gravy and lashings of wine !!

I live in a area where fishing is a big part of the economy so am very familar with crayfish and crabs which are harvested in abundance here along with huge qualities of prawns, (I think you call them scrimp), I have even eaten winkles if I am correct in assuming they are the same thing as we call periwinkles, but clams we don't have.

Winkles,periwinkle are the same thing.I'll gather about 20 pounds of them and steam them,then clean and pickle in vinegar with cloves of garlic.Put them in large glass jars and store in the frig.I like to snack on them or cook with other seafood.One batch like this lasts about a year.I think our idea of crayfish might be different,the ones I catch are from fresh water and are only about 8 centimeters long.I think what you call crayfish is what we call lobster,which is my favorite seafood.

@nogds9 we have crayfish and lobster, lobster is red when cooked but our crayfish are white when cooked!! they look like v. skinny stunted relatives of lobster, not sure if it is the same in AU

The crayfish I catch right out front of my house in the lake.They turn red when cooked and resemble tiny lobsters.Down in southern USA they are used in Cajun and Creole cooking.
In the summer months I go to the mud flats at low tide and dig for clams.Mussels are great and in huge abundance along the coast of Maine,I'll have a meal or more all year round.Sauteed in butter and white wine and garlic,you can't beat it.

The crayfish I was refering to are saltwater crayfish and are quite big, 30-45cm and more than a meal in each.
We also have a fresh water variety that is probably very similar in size to your crayfish, called redclaws for obvious reasons.

An interesting story about redclaws is that our fisheries department here in Queensland stock our big dams and water reservoirs with fingerlings of Barramundi for recreational angling. They are an excellent eating fish. To help with that process they also stocked them with redclaw because they are a prized food of the Barramundi. But of course mother nature has had the last laugh. The redclaw have reproduced wildly and are now in such huge quantities they have almost become a pest.
The Barramundi have also reproduced and grown at stagging rates feeding on the redclaw.
But alas an angler dangling a piece of bait on a hook has absolutely no chance of ever catching the overfed Barramundi.

greek green beans with lamb shanks

ingredients:
3/4 cup olive oil
2 cups chopped onions
3 garlic cloves crushed
1 kilo or 2 pounds green beans trimmed
4 large tomatoes diced
4 teaspoons sugar
salt to taste
4 lamb shank

directions

1. heat oil in pot over medium heat.cook and stir the onions and garlic until tender.
2.in a seprate pan brown lamb shanks and drain well on paper towel.
3. place lamb shanks on the onion and garlic mixture place beans,tomatoes,sugar,salt and beef stock enough to cover everything in pot try and give it a stir increase heat to high and cover and bring to the boil then put on low and cook for an hour remove lid and keep cooking until all the jucie's have gone nearly once you remove the lid turn up heat so it keeps at the boil maybe another hour cooking

Mmmm I like BBQ pork. I do that in my slow cooker about once a month or so. Since I work in retail I have had too many fast food lunches over the years, but sometimes nothing beats a burger and fries!

@MrsJ: Well strange as it may seem, I really don't get that fired up over food like I used to; had a GB a few years back to get a handle on some diabetes and since then only eat *very* tiny amounts, not enough to make it worth it most days. Most meals are about 6-10 bites, doesn't matter what it is so fast food is better for me since I don't have to work my a$$ off to make it for so little enjoyment. However, when I want to show the missus that I love her I tend to do the whole Emeril thing....also, since I do all the cleaning, shopping, working and cooking, I reserve 3 nights a week for simple meals to keep my sanity (working 12-15 hour days doesn't help)....

Geez have we been on a diet the past four days gang? Odo is the last one to eat, the irony of ironies being that a changeling doesn't need to ;)

The lazy git in me comes riding back out. Tonight its one of those party-sized meat lasagna's, garlic bread (can never get enough of that) and spumoni for dessert. And if you look closely you can see how this whole thing is done with no work to speak of which means I get more time with the missus (can never have enough of that either).

Say, that gives me an idea...

yep, sauteed the italian sausage with some onion and diced hamsteak I found, then put it all in a slow cooker with some corn, peas, green beans and tomatoes. Added some seasoning (cayenne, paprika, oregano and fresh garlic) and beef broth, clapped on the lid and cooked it for four hours. Cooked up some of those multicolor spiral noodles a half hour before serving with some crusty rolls and butter.

Turned out not so bad.

Home made of course but with a dressing from a jar which I spice up a little with Worcestershire sauce and some Red Rooster.
(Macs are too bland for my taste)

Mind you they started as 1/4 pounders. The weight probably reduced when grilled in the George Forman. But never mind my dog loves the dripping when cold.

Cooking Tip. for burgers done the way I do them. If too rare on the inside when the outside seems ok. Pop in the Microwave on full for 30 to 40 seconds in a plastic container. Standing time is taken up by building your burger, besides the spiced dressing I like raw onion slices and pickled cucumber.

Yes I have tried it but I prefer the taste of the mustard in the base of Picalilli. Dijon tends IMHO to overpower all other tastes
and I like to savour the various tastes as I eat as well as get the spicyness. Purely personal preference of course. Thanks for the heads-up anyway others may like to try Dijon with their burgers. I agree it has a very nice flavour and others may prefer it to my plethora of tastes.

Well it is hot here so tonight we are having a cold summer salad:
(in the morning or better, day before)
Mix in a large mixing bowl:
1 bag of elbow, corkscrew or other fun pasta, cooked al dente and drained.
1 envelope of Knorr or other dried vegetable soup mix
9 oz of shredded (tuna, turkey or chicken)
1 can of peas
6 oz shredded cheddar cheese
enough salad dressing or mayonnaise to make everything moist about 10 percent more. Based on the above, about 1/2 of a jar will work.

Once mixed, cover and store in refrigerator until chilled through and all dried veggies have rehydrated. Super easy and with the exception of boiling the noodles, put together in minutes. Occasionally I will finely dice some sweet onion into this as well. Salt and pepper to taste. I also occasionally dust the top of it with paprika.

Crud! I have to scrounge up *something* but am too tired to do much so I fear that tonight will end up being some form of horrid tv dinner...I know, some can be good but I am a cheap SOB and get them 10 for 10 dollars which assures you have a certain level of quality. Have some turkey or chinese themed meals to choose from. Made the mistake of sending the wife to the store last time they had a sale so we now have 10 different kinds of chicken nugget-based TV dinners. And you know how good those tend to be; they generally make me reconsider the need to eat.

You guys and gals have all the fancy stuff; fine, at least *my* dinner is forum-related! :)

Yorkshire pudding is basically a batter mixture containing wheat flour, 2 eggs, whole milk, a drizzle of rapeseed oil and a little salt. Baked and fully cooked before the addition of the meat; vegetables and gravy.
Its consistency when cooked is similar to a soft bread crust.

Button Sprouts are small brussel sprouts which still retain their sweetness as opposed to those that have grown to full size. They cook up softer than a full size sprout and are not as chewy.

You notice there are no potatoes mentioned above as the carbohydrate content of the pudding more than compensates.
(not for those on a diet.LOL)

Do try it done correctly its beautiful. You may like to try a store bought one first though to get an idea of what it should look and taste like when cooked.

Thank you, I think there is a store near me where I could buy the York. pudding. As far as button sprouts, no chance of finding those at all. They do sound much better tasting then brussel sprouts my childhood food enemy.

Yes button sprouts are not as caustic in taste.

If you buy your sprouts fresh, take the time to pick the smallest you can find (less than 1/2" diameter are best).
They usually do not need as much removal of outer leaves so there is no loss of value for weight purchased. (You do not have a large chunk to cut off at the end either).
Most people think the opposite is true and tend not to buy small ones so there should be ample toward the bottom of the tray.
Thats where I get mine from. Just let them soak in cold water whilst agitating gently to remove any soil or dust etc., before preparing for cooking.(remember to change the water before preparation). The effort is well worth it.

today we are having lobster and prawn smoked salmon coronetts to start, with hot crusty rolls.

main course is a three bird roast (goose stuffed with a turkey stuffed with a pheasant, interleaved with pork and cranberry sausagemeat stuffing.
garnish- bacon wrapped chipolatas, redcurrent jelly brushed roasted pears and seperate fig and pork stuffing.
veg- red cabbage with apple and port, creamy mashed potatoes, rooster potatoes roasted in goose fat, glazed carrots, brussel sprouts tossed in bacon, sweetcorn and peas,
dessert -home-made trifle, cheese and biscuits then later xmas pudding and mince pies (maybe at my sisters house if anyone is up to driving)
no lunch or supper just breakfast then christmas dinner today lol

tash i don't want to make you jealous but we had, shell on prawns with homemade saucesomoked salmon and ciabatta bread. followed bt chateaubriand with winterberry gravy, glazed carrots. sweetcorn yorkshire puddings to fill with gravy and potatoes roasted in goose fat. Then trifle with a madeira cake base, a healthy measure of cointreau in the jelly topped with fresh custard and whipped cream. Wine was chablis, the port was rubt and the guests couldn't manage the exrensive cheeseboard. The coffee, liquers and chocolate covered cherries weren't even mentioned, i really must learn portion control lol.

Dirty rice is a Cajun dish,white rice is cooked with chopped chicken livers,gr.pepper,celery,onion and parsley.I like to spice mine up with a little cayenne pepper and curry powder.
What ever you do don't buy the boxed stuff.It's made with soy sauce and no chicken livers,very salty.

melon, mint choc ice-cream, melted chocolate with marshmallows grapes and toffee banannna fritters and one medium glass of wine (driving) then home to alcohol, lovely dry white wine (no champagne saving that for night out with my sister)
